Tricolor Cauliflower Curry
Recipe adapted from Raw Food Detox (Skyhorse Publishing, May 2012) by Ulrika Davidsson.
Serves 4
Ingredients:
- 1/2 white cauliflower, cut into small florets
- 1/3 purple cauliflower,?cut into small florets*
- 1/3 green cauliflower,?cut into small florets*
- 1 onion, finely chopped
- 1 garlic clove, minced
- 1 tablespoon grated fresh ginger
- 1 tablespoon canola oil
- 1 (14.5-ounce) can coconut milk
- 1 tablespoon red curry paste
- 1 tablespoon agave (the original recipe calls for honey)
- Juice of 1 lime
- Salt and white pepper to taste
- 1/2 cup cashews
- 1 head lettuce, torn
Directions:
- Place cauliflower together in a medium bowl.
- In a large skillet, saute the onion, garlic, and ginger in the oil over medium heat for a couple of minutes.
- Add coconut milk, curry, agave, lime juice, salt and white pepper, and bring to a simmer. Simmer for 5 minutes.
- Add cauliflower and continue cooking for a few minutes more.
- Roast cashews in a dry skillet over medium heat until toasted.
- Line the bottom of 4 dinner plates with lettuce.
- Divide the cauliflower mixture among the dinner plates and top with roasted nuts. Serve immediately.

Editor?s note: Davidsson?s Raw Food Detox recipes may not be viewed as ?raw? by raw purists, but I actually find her recipes intriguing because I?m not into cleanses and detox diets that advocate juicing-only regimes or advocate meal plans that a busy mom with a hungry family will find excruciatingly challenging (where?s the fun in that?).
